Spring Pasta Salad Alla Burrata
For 4 servings
1 Box (340g) of Barilla Gluten Free Rotini pasta, cooked according to the directions on the box
½ shallot, very finely chopped
4-6 fresh artichokes, cooked and prepared, or 1 can (14oz) of artichoke hearts, cut in quarters
1/3 cup sun-dried cherry tomatoes
¼ cup of black olives pitted
1 cup (250g) of Fresh Burrata cheese
¼ cup of fresh basil leaves, minced
½ cup (or about) of extra-virgin olive oil
Salt and pepper to taste
Mix all the ingredients together and serve topped with fresh basil leaves.
Note: this recipe is equally delicious without the cheese.
Be creative and add some chopped gluten free salami.
